I think a good idea would be to regulate prices for items in shops. This would keep sellers from making their items ridiculously over-priced. As I am typing this I'm realizing it's a bit of a stretch but not everything has to be priced. For example: only food items and blocks could have prices while shop owners could make up their own prices for things that are a little more difficult to determine their value such as enchanted armor and tools. Again, just a suggestion, this probably won't happen anyways.

It's a free market. Supply and demand.
That is the only fair way to regulate prices.

Everything else is dictatorial and immoral.
If Apple & Co. were to regulate prices, then player shops would become obsolete, and the server could then just make a server shop, where the server sets the prices and the items gets duplicated into the game like some other crappy server.

If you don't like the prices, then it's the perfect opportunity for you get up to the rank required for a shop, make a shop, sell whatever you think is "ridiculously overpriced" to a much lower price.
That way you would force the other shops to adjust their prices, unless they want to sit with a bunch of goods in stock and no customers.

    Basic economics 101

The thing is, eventually someone will realize they can make a fortune off selling that item for a fair price, and the overpriced person will not get any sales.

I think sellers should decide this on their own, if they want a cooked cod to be sold for 64 diamondblocks, they can do so, even though nobody would buy it. The sellers and customers should see it for theirselves.
